Does the ADC have overvoltage protection such that it's ok for the occasional input to be outside the set gain range? I'm specifically going to be using the +-1.0V range. If so, is there a rule of thumb for how much outside the set range is ok?

The limit on any T7 AINx terminal versus GND is +/-20 volts regardless of AIN configuration. This is the continuous limits, as all terminals can handle much higher transients such as ESD.
