Load cell wiring

Hello again I am wiring a load cell (along with all the other stuff ive been doing) and I have read that the LJTick-InAmp is a device that can be used to turn differential signals into single signals. Could I not do this simply by using two inputs (T7 series) and manually calculate the difference?

You can digitize the 2 single

You can digitize the 2 single-ended signals and subtract in software, but usually you get the best results if you can take the difference in analog and then digitize that one value, and the T7 supports differential inputs so that is what you want to do with a load cell, which is a type of bridge circuit:
